Finally, a breakfast recipe that is free of common allergens and complex carbohydrates. The inspiration for this recipe came from Everyday Paleo and it satisfies that little bit of sweetness we've come to enjoy at breakfast time. I'm almost embarrassed to say that we ate this for breakfast all week! If time is an issue first thing in the morning, this recipe can be prepped the night before by pre-cooking the sausage and shredding the squash.
Sausage & Butternut Hash
1/3 butternut squash, peeled and grated
2 Tblsp cinnamon
2 Tblsp honey
1/4 raisins (optional)
1-2 cups Grain-free, additive-free sausage pre-cooked and diced
Pre-heat coconut oil in a skillet. Add grated butternut squash and toss with cinnamon. Cover, stirring frequently until the squash is softened (approximately 10 minutes). Add honey and mix to combine. Toss in raisins and pre-cooked sausage, stir together and serve warm!
Variation: Use zucchini instead of winter squash during the summer months to keep it seasonal!
